A light and fluffy biscuit
(Makes 12 biscuits)
Preheat oven to 400 degrees.
Combine:
2 c. flour
4 tsp. baking powder
½ t. cream of tartar
½ t. salt
2 T. sugar
Mix, then add:
½ c. shortening or oil
1 egg, unbeaten
2/3 c. milk
Mix dry ingredients, then cut in oil or shortening until mixture resembles coarse crumbs. Add egg and milk, then stir just until mixed. Turn dough onto a floured surface and knead lightly 5 times. Use a light hand. Dough should be soft and a little sticky. Roll out to about ½ inch thickness, then cut with biscuit cutter and place on a greased baking sheet with sides just touching. Bake at 400 degree for 15 minutes, or until lightly browned. Serve hot with butter and jam or honey, or top with sausage gravy for a hearty breakfast.
